Tuesday 30th Week OT
St. Luke’s Institute
October 29, 2013
 YEAST & GLUTEN ++++++++++++++++++++++++++++++
Ø  I enjoy cooking, esp making bread
Ø  In 1-day bread making course, learned that bread requires 2 things to rise: gluten & yeast
Ø  Gluten provides the structure ~ tinker toys
Ø  Yeast provides the gas, Co2
Ø  Dough w/ yeast, but w/o gluten increases, but spreads out across the table
Ø  Dough w/ gluten, but w/o yeast has the tinker toy structure, but doesn’t rise within it
Ø  With both elements, you get a beautiful bowl of risen dough and great tasting loaves of bread
SPIRIT & CHURCH ++++++++++++++++++++++++++++++
Ø  When Jesus is asked about the K/G, responds, “To what shall I compare it? It is like yeast that a woman took and mixed in with three measures of wheat flour until the whole batch of dough was leavened.”
Ø  To words of the Lord, I’d like to suggest that the yeast as air, spirit, is the living life-giving yeast that makes the bread, bread
Ø  And the gluten that is found in the wheat is the Church as a structure to lift that Spirit high, to give it access and visibility, corporeality, and permanent presence through the ages
WORK & TIME ++++++++++++++++++++++++++++++++
Ø  Structure & life-giving gas are not the only important things to remember about bread
Ø  There is the hard work of kneading and the virtue of patient waiting for the dough to rise
Ø  This is also true of experiencing the effects of God’s presence in our world
Ø  It takes work, time, and patience.
CONCLUSION +++++++++++++++++++++++++++++++++
Ø  Gluten and yeast, hard work and patient waiting – not only good tips regarding bread making, but for being God’s presence in our world as well
